  6. Take dessicated coconut
  7. Make ready 2 grams Ice cream stabiliser optional
  8. Get 5 egg yolks

  1. Grind sugar till fine and split it putting half in a jug and rest in blender.
  2. Add the ice cream stabiliser to the sugar in the blender and grind a few seconds.
  3. Put the single cream, whipping cream and milk in a big pan but do not switch it on.
  4. Put the sugar and stabiliser mix into the milk and cream and stir until mixed well.
  5. Set a timer for 15 minutes
  6. Add egg yolks to sugar in a jug and whisk until nice and light
  7. Add the extract and whisk for few seconds
  8. When 15 minutes are up turn heat on low and heat the milk and cream mix stirring, when it's near boiling add some to egg mix and pour back into the pan stirring on low until it coats the back of a spoon.
  9. Take off the heat
  10. Put into a mixing bowl and cover with cling film to stop a skin forming. Leave to cool at room temperature I left mine 5hrs
  11. Turn ice cream maker on paddles turning pour mixture in and let it run until ice cream is done. Mine took 60 minutes
  12. Put ice cream into freezeable container and if using stir in the coconut
  13. Serve or freeze and enjoy…
